A Lebanese-Inspired Cabbage Salad

Fresh, Zesty, and Flavorful Cabbage Salad Recipe

I feel like cabbage is often forgotten when making salads, but it’s one of my favorite bases. I’ll take it over spinach or kale any day! Being Armenian, we take inspiration from Mediterranean and Middle Eastern cuisine, making for the yummiest foods. Here’s my take on a Lebanese-inspired cabbage salad.

What you’ll need:

  • 1/2 a green cabbage
  • 3 persian cucumbers
  • 4 gutted tomatoes (I used Campari)
  • 5-6 radishes
  • 1/2 bunch of fresh parsley
  • 1/2 bunch of fresh mint
  • Season: salt, pepper, sumac, extra virgin olive oil, lemon juice from 1 and 1/2 lemons

Steps taken for salad base: Thinly slice cabbage, quarter persian cucumbers (peel if you don’t like the skin), thinly slice radishes, gut and chop tomatoes into small chunks, finely chop parsley and mint. For the dressing, mix together lemon juice, EVOO, salt, pepper, and sumac to taste.

I made this cabbage salad to take to my sister-in-laws house for Armenian Christmas Eve (January 5th). At home, I chopped all the veggies and herbs, and placed them in a large pyrex bowl. I mixed in the dressing before plating for the table. This salad gets soggy quickly, so I recommend mixing in the dressing right before serving.

You can add red or green onion to this recipe, but I opted-out since some family members dont like fresh onion. Fresh garlic is also another great addition!

My Favorite Pairings

This cabbage is so light, that it can be paired with almost any dish. I love to eat it with fish and rice / potatoes, as part of a mezze platter, alongside barbecued meats and chicken, and in a shawarma wrap.

  1. Try it with peperoncini next time! I gut them and chop them finely and it adds such a pleasant kick!
