No Refined Sugar Banana Oat Muffins
Every time my bananas are getting ripe, I make a quick batch of these banana oat muffins! They’re a great breakfast or snack option, especially for my toddler! He thinks he’s having a sweet treat, while I know I’ve given him nourishing / whole ingredients that will keep him full and satiated.

What you’ll need:
- 1 and 3/4 cups all purpose flour
- 1/3 cup old-fashioned rolled oats
- 1/2 tsp salt, 1/2 tsp cinnamon
- 1 tsp baking soda
- 1/3 cup coconut oil
- 1/4 cup honey, 1/4 cup maple syrup
- 1/4 cup milk
- 2 eggs
- 1 tsp vanilla
- 3 bananas
- Topping: 2 tbs rolled oats, 1 tsp cinnamon, 1 tsp coconut sugar
Steps to follow:
- Preheat oven to 325ºF.
- In a large bowl, mix together the dry ingredients (flour, oats, salt, cinnamon, baking soda) and place to the side.
- In a medium bowl, whisk together coconut oil, honey, and maple syrup until smooth. Add in bananas and mash. Stir in milk, eggs, and vanilla.
- Pour wet ingredients into the dry, and mix until combined and no more dry flour bits are seen.
- Pour batter evenly into a cupcake tin with liners (dozen).
- *Optional* – Sprinkle each muffin with oats, cinnamon, and sugar of choice (I use coconut sugar).
- Bake for 20-25 minutes, or until golden brown.
- Move muffins to a cooling rack, then enjoy! I like to cut one open while its still hot and spread butter on it *chef’s kiss*!
You can add in whatever you’d like to these muffins: nuts, chocolate chips, dried fruit, etc!
