No Refined Sugar Banana Oat Muffins

Every time my bananas are getting ripe, I make a quick batch of these banana oat muffins! They’re a great breakfast or snack option, especially for my toddler! He thinks he’s having a sweet treat, while I know I’ve given him nourishing / whole ingredients that will keep him full and satiated.

What you’ll need:

  • 1 and 3/4 cups all purpose flour
  • 1/3 cup old-fashioned rolled oats
  • 1/2 tsp salt, 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/3 cup coconut oil
  • 1/4 cup honey, 1/4 cup maple syrup
  • 1/4 cup milk
  • 2 eggs
  • 1 tsp vanilla
  • 3 bananas
  • Topping: 2 tbs rolled oats, 1 tsp cinnamon, 1 tsp coconut sugar

Steps to follow:

  1. Preheat oven to 325ºF.
  2. In a large bowl, mix together the dry ingredients (flour, oats, salt, cinnamon, baking soda) and place to the side.
  3. In a medium bowl, whisk together coconut oil, honey, and maple syrup until smooth. Add in bananas and mash. Stir in milk, eggs, and vanilla.
  4. Pour wet ingredients into the dry, and mix until combined and no more dry flour bits are seen.
  5. Pour batter evenly into a cupcake tin with liners (dozen).
  6. *Optional* – Sprinkle each muffin with oats, cinnamon, and sugar of choice (I use coconut sugar).
  7. Bake for 20-25 minutes, or until golden brown.
  8. Move muffins to a cooling rack, then enjoy! I like to cut one open while its still hot and spread butter on it *chef’s kiss*!

You can add in whatever you’d like to these muffins: nuts, chocolate chips, dried fruit, etc!
